Yeah I think that setting got lost when we released the new Settings page (hence documentation being out-of-date). For the moment that setting does not exist, so I'd recommend just putting a "+" in your email address and filtering it out. For example, if your email is "dpedenprairie@gmail.com" you could just change it to "dpedenprairie+techsuite@gmail.com" and it will still go to the same email address, and you filter it easily in gmail.
For cleanup tools, the mode is specifically referencing what it will clean up. The "All" options do run all the modes within that tool.
"Backup" deletes is backups that programs have generated themselves. For instance a program might make a backup of its internal database during an upgrade, and name this file database.bak. This cleaning option will find these files and remove them. It’s usually perfectly safe to do this, since any important information should be backed up properly
anyway.
"Vacuum" optimizes and cleans the sqlite database that certain apps use. For example, Firefox has a sqlite database with tons of stuff in it that's irrelevant. Vacuum cleans that up, thereby reducing it's size.
